Pot Stills vs Column Stills: How Distillation Shapes Spirit
Distillation is, technically, just heating a fermented liquid to vaporise the alcohol and then condensing the vapour back into a liquid. But the equipment used to do this — pot still versus column still — produces fundamentally different spirits, and the choice is the most consequential decision in any distillery's design.
Pot stills
A pot still is a single copper vessel — a "pot" — heated at the bottom, with a neck rising to a lyne arm that carries the vapour out to a condenser. It is a batch process: fill the still, distil, empty, repeat. Each batch typically requires two or three distillations (the wash still produces "low wines"; the spirit still produces the final new-make).
Pot stills are inherently inefficient at separating alcohol from water and from other compounds — they cannot reach high ABV in a single pass. The "low wines" come off around 20-25% ABV, the final spirit around 65-72% ABV. This inefficiency is the point: the lower the final ABV, the more flavour compounds (fusel oils, esters, congeners) survive into the new-make spirit.
Pot stills are used for: malt Scotch, Irish pot still whiskey, cognac, armagnac, agricole rum, tequila, mezcal, fruit brandies, and most premium gin.
Column stills
A column still — also called a "continuous still" or "patent still" (after Aeneas Coffey's 1830 patent) — is a continuous-flow vertical column. Wash enters the column part-way up; steam rises from the bottom; perforated plates inside the column create a continuous distillation across a temperature gradient. The result is much more efficient separation: spirit comes off at very high ABV (often 90-96%) and most volatile flavour compounds are stripped away.
Column stills are used for: grain Scotch and grain whiskey, most American whiskey (bourbon, rye), most rum and vodka, and industrial neutral spirit for bottlings like gin and vodka.
What this means for flavour
A pot still produces a flavour-dense, characterful new-make. A column still produces a lighter, cleaner, more neutral new-make — but the configuration matters: a single low-plate column produces something quite flavourful (bourbon), while a high-plate column or multi-column system produces near-neutral spirit (vodka).
The hybrids
Modern craft distilleries often use hybrid stills — pot stills with rectifying columns attached on top, allowing the distiller to switch between heavier and lighter styles by activating or bypassing the column.

The pot still tradition maps fairly cleanly onto premium-spirit geography: Scotch malt distilleries, Irish whiskey, French brandy regions, Latin American agave producers, Caribbean rum estates.
