The Angels' Share: Evaporation, Climate, and What Whisky Loses to the Air
The "angels' share" is the romantic industry name for the spirit lost to evaporation through the porous oak of a maturing cask. The rate varies enormously by climate: cool, damp Scotland loses around 2% per year; the Kentucky bourbon belt averages 4-6%; tropical climates like Taiwan, India, or the Caribbean can lose 10-12% or more per year. Over a long maturation, the cumulative loss is significant: a Scottish 30-year-old will have lost about half its original volume; a tropical 30-year-old might lose almost everything.
What evaporates
In a temperate climate (Scotland, Ireland, much of mainland Europe), water and alcohol evaporate at roughly similar rates, with a slight bias toward alcohol loss — so the ABV of cask-strength whisky drifts down over decades, from around 65% at filling to perhaps 50% after 20 years. In a hot, dry climate, water evaporates faster than alcohol, so the ABV can rise: some Indian or Kentucky cask-strength whiskies come out of the warehouse stronger than they went in.
What stays
Not just liquid loss matters — the wood itself is doing chemistry. Compounds in the oak (lignin breakdown products, vanillin, lactones, tannins, charred-layer sugars) leach into the spirit. The "char layer" (the burnt inside of a bourbon barrel, or the toasted layer of a wine cask) acts as a filter, removing sulphurous compounds and concentrating ester and acid character.
Why climate changes everything
The same spirit matured in Scotland for 18 years and in Taiwan for 5 years will arrive at roughly similar intensity of cask character — Kavalan, the Taiwanese distillery, frequently bottles 5-year-olds that taste like Scottish 15-20-year-olds because the rapid evaporation and intense maturation chemistry compress the development. The tradeoff is that very long tropical maturation is essentially impossible: the cask loss becomes unsustainable.
Maturation warehouses
The warehouse itself matters. Traditional Scottish dunnage warehouses (low, single-storey, earthen floors) maintain steady cool and damp conditions, giving the slowest and most stable maturation. Racked warehouses (multi-storey) are more efficient operationally but create different conditions on different floors. American rickhouses, multi-storey wood-frame warehouses with no climate control, deliberately use the heat differential between floors to age different casks into different characters.
The economics
The angels' share is the principal reason that mature whisky is expensive. A distillery that fills a cask in 1995 and bottles it in 2025 has not just stored it for 30 years — it has lost about half of the contents to evaporation and tied up the working capital across three decades. The price of a 30-year-old bottle reflects all of that.
