Juniper: The Foundation

It is one of the most widely distributed conifers in the world, and the botanical variation between populations in different climates and soils is reflected in subtle but real differences in the flavour of the berries.
The primary flavour compounds in juniper berries are terpenes — alpha-pinene, myrcene, sabinene, and limonene among others — that produce the characteristic aromatic profile: piney, slightly citrusy, resinous, with a bitter back note. The composition of these terpenes varies with geography. Italian juniper from Tuscany or Calabria tends to be more citrus-forward and less resinous than Macedonian juniper, which has a more intensely piney character. Juniper berries are typically dried before use — fresh berries are green and under-ripe, while fully ripe berries are dark blue-black and have had time to develop their full aromatic potential. Coriander Seed: The Second Pillar
After juniper, coriander seed is the most universally used gin botanical, appearing in the vast majority of classic and contemporary gins as the second most prominent ingredient. Coriander used in gin is the seed — the fruit — of Coriandrum sativum, the coriander plant, not the leaf (cilantro in American English), which has an entirely different flavour profile and is not used in distilling.
Dried coriander seed contributes a complex mixture of citrus, sage, and floral notes. The primary aromatic compound is linalool, a terpene alcohol with a floral, slightly sweet character that complements and rounds the harsher resinous edges of juniper. In large quantities coriander becomes dusty and slightly dry; in proportion, it is a crucial textural modifier for the spirit. Moroccan coriander seed is considered among the finest quality, with a balance of citrus and floral character; Bulgarian and Romanian seed is also widely used.
Angelica Root: The Fixer
Angelica root — from Angelica archangelica, a large umbelliferous plant native to northern Europe and Siberia — serves a different function from most gin botanicals. Its flavour contribution is relatively subtle: earthy, musky, slightly woody. Its key role is as a fixative — it contains compounds that bind the more volatile aromatic elements of other botanicals, stabilising the overall flavour and extending the perception of aroma on the palate.
The concept of botanical fixing is well established in perfumery, where fixatives extend the life and projection of fragile aromatics. In gin, angelica root performs a similar function, helping the more delicate floral and citrus notes from other botanicals persist longer in the glass and on the tongue. Most London Dry gins include angelica root as a structural component rather than a flavouring in the primary sense.
Citrus Peel: Brightness and Modernity
Lemon peel and orange peel are among the most common secondary botanicals in gin. The peel — not the juice or the pith — contains the essential oils of the fruit in their most concentrated form, housed in the oil glands visible to the naked eye on the outer surface of the skin. These oils include limonene (citrus-forward, bright) and bergapten (the compound responsible for the distinctive fragrance of bergamot orange, used in Earl Grey tea).
Different citrus varieties produce distinctly different botanical contributions. Sweet orange peel from Valencia oranges is warmer and rounder than bitter Seville orange peel, which has a more complex, marmalade-like character. Cardamom — the seed pods of Elettaria cardamomum, from Kerala in southern India — is particularly prized for the eucalyptus-like, faintly minty freshness it adds alongside its spice. Hendrick's Gin, produced at Girvan in Scotland, uses rose petals and cucumber — both very unusual in the gin world — as central flavouring elements, producing a distinctly floral, fresh style quite unlike classic London Dry. South African gins use rooibos, honeybush, and Cape botanicals. Japanese producers incorporate yuzu, sansho pepper, and Japanese green tea. Scottish gins use heather flowers, Scots pine, and seaweed. How Botanicals Are Added
The method of adding botanicals to gin is as important as the choice of which botanicals to use. Traditional one-shot distillation steeps all botanicals together in the base spirit overnight or for several hours, then distils the entire mixture in a single pass. This approach integrates the botanicals fully and produces a gin where the character of the botanical blend as a whole is more evident than any individual component.
Some distillers add botanicals to the still's botanical basket — a chamber in the neck of the still through which the alcohol vapour passes, extracting the aromatic compounds from the botanicals without subjecting them to the heat of the pot. This vapour-infusion method, used by Hendrick's and the Carter-Head still tradition, produces delicate, floral botanical extraction that can be less successful with very woody or root-heavy botanicals but excels with flowers and fresh citrus.
Post-distillation addition — adding a separate botanical distillate, essential oil, or botanical maceration to the finished spirit — is used by some producers, particularly in the compounding gin sector, and is permitted by regulation.
