A Short History of Distillation

Distillation — heating a liquid mixture to separate volatile compounds by their different boiling points — is one of humanity's oldest applied chemistries. The principle was understood by Greek alchemists at least by the 1st century CE, though early applications were more often for essential oils and medicines than for beverage alcohol.

Early origins

The earliest documented stills date from Alexandria, Egypt, where 1st-century alchemists used early distillation apparatus (the "kerotakis" and related devices) to extract aromatic and medicinal substances. Maria the Jewess, an Alexandrian alchemist, is credited with several still designs. The Arabic world expanded the technology significantly: the word "alcohol" derives from the Arabic "al-kuhl," and "alembic" from "al-anbiq" (itself from Greek). Persian polymath Al-Razi (Rhazes, 9th century) wrote detailed distillation instructions.

Medieval Europe

Distillation reached medieval Europe via the Arab-influenced southern Mediterranean and the translation movements of the 11th-12th centuries. Salerno medical school texts describe medical distillation; the 13th-century Catalan philosopher Ramon Llull developed early alembic still designs. Monastic communities became the principal European distillers — herbal liqueurs (Chartreuse traces to a 1605 manuscript), medical brandies, and the early ancestors of whisky and gin.

The whisky tradition

The first written reference to whisky distillation in Scotland is from 1494 — an Exchequer Roll recording the sale of "eight bolls of malt to Friar John Cor wherewith to make aquavitae." Irish whisky distillation may pre-date this; the Bushmills site claims a 1608 royal licence, but documented domestic distillation in Ireland goes back to the 12th century.

The gin moment

The Dutch developed jenever — juniper-flavoured malt-wine distilled spirit — in the 16th century. William III's Glorious Revolution of 1688 brought Dutch jenever to England; the deregulated English gin trade exploded into the "Gin Craze" of the 1720s-1740s, dramatically depicted in Hogarth's "Gin Lane." The Gin Acts of 1729-1751 brought the trade under regulation, eventually producing the disciplined London Dry style of the 19th century.

The Coffey still revolution

Robert Stein and then Aeneas Coffey developed the continuous column still in the 1820s-1830s. Coffey patented his improved design in 1830. The column still permitted continuous, efficient, large-scale production of light grain spirit — and revolutionised the industry. Blended Scotch (malt + grain) became possible at scale; the modern vodka, gin, and rum industries depend on column distillation.

The modern era

The 20th century saw consolidation: the great Scotch whisky industry, the American bourbon industry shaped by Prohibition (1920-1933) and its aftermath, the global rum and vodka categories. The 21st century has seen the craft distilling explosion — over 2,500 American craft distilleries by 2025, dozens in every European country, the rebirth of Irish whiskey, the rise of Japanese, Taiwanese, Indian whisky as global categories.
