Irish Whiskey Triple Distillation Explained

Triple distillation — distilling the fermented wash through three consecutive still runs before the spirit is placed in casks for maturation — is one of the defining technical characteristics of Irish whiskey, and the feature most frequently cited in distinguishing it from Scotch single malt, which is almost invariably double-distilled. The claim that triple distillation produces a smoother, lighter, more approachable spirit is accurate as far as it goes, but understanding why requires looking past the number of distillation passes to the actual chemistry of what each pass does.

The reality of triple distillation in Irish whiskey is more nuanced than its marketing representation. Not all Irish whiskey is triple distilled — Cooley Distillery (now under the Beam Suntory umbrella as Kilbeggan Distilling Company) uses double distillation for its single malts, influenced by a Scottish production approach. Not all triple distillation is equivalent — the still sizes, the cut points chosen by the distiller, and the strength at which the spirit exits each still vary considerably between distilleries. And triple distillation itself does not automatically produce a better whiskey — it produces a different one, shaped by production choices that have as much to do with historical context as with technical optimisation.

What Distillation Actually Does

Distillation separates components of a liquid mixture on the basis of their different boiling points. Ethanol — the form of alcohol that makes whiskey drinkable rather than poisonous — boils at approximately 78.4 degrees Celsius. Water boils at 100 degrees Celsius. Most of the other compounds in fermented wash (congeners — esters, aldehydes, fusel alcohols, acids, and other organic compounds that carry flavour and aroma) have a range of boiling points above and below ethanol.

When the fermented wash is heated in the pot still, vapour forms that is richer in ethanol and lighter congeners than the liquid left behind. That vapour is collected and cooled — condensed back to liquid in the condenser. The result is a liquid richer in ethanol than the starting wash, and with a different congener composition. Some congeners — the lighter, more volatile ones — have been concentrated alongside the ethanol. Others — the heavier, less volatile ones — have been left behind in the still.

The distiller makes a choice at the end of each distillation run about which portion of the distillate to keep. This is the "cut" — the division of the run into the foreshots (the first portion to come off, richest in lighter, often undesirable compounds), the heart (the middle portion, richest in the desired ethanol and fruity, pleasant esters), and the feints or tails (the later portion, heavier in fusel alcohols and less desirable congeners). The foreshots and feints are typically redistilled in the next run.

The Three Still System at Midleton

The most systematic Irish triple distillation operation is at the New Midleton Distillery in County Cork, where Jameson, Powers, Redbreast, Green Spot, and several other brands are produced. The New Midleton system is enormous by any comparison — it processes millions of litres of fermented wash annually — and it uses a combination of different still types and sizes that make it more complex than a simple three-pass pot still operation.

In the traditional pot still Irish whiskey system (used for Redbreast, Green Spot, Powers, and the Midleton range), the first distillation in the wash still produces a liquid called low wines, at approximately 25 to 35 percent ABV. The low wines, combined with feints from the previous cycle, go into the feints still (the second distillation), producing a stronger distillate called strong feints at approximately 60 to 65 percent ABV. The strong feints go into the spirit still (the third distillation), from which the new-make spirit emerges at approximately 82 to 86 percent ABV, ready for cask filling.

Each distillation pass removes heavier congeners and concentrates the lighter, more volatile ethanol-adjacent compounds. By the third pass, the spirit is significantly lighter in total congener load than double-distilled spirit at an equivalent point. This lighter congener load is the source of the characteristic "smoothness" of Irish whiskey — there are fewer of the heavy fusel alcohols and heavy acids that can make unfinished spirit taste harsh or rough.

Pure Pot Still Whiskey: Ireland's Unique Style

One of the genuine innovations in Irish whiskey is the pure pot still style — made from a mixture of malted and unmalted barley, distilled entirely in copper pot stills. This style, which has no equivalent in Scotland, Japan, or the United States, was originally developed for economic reasons: a significant portion of unmalted barley was cheaper than 100 percent malted barley. Over time, the production of pot still Irish whiskey from mixed-grist mashes became a tradition that persisted for its distinctive flavour characteristics as much as for economic reasons.

The unmalted barley in pure pot still Irish whiskey contributes a spicy, oily, and distinctly grainy character quite different from the malt-forward profile of Scottish single malt. Redbreast, the most celebrated pure pot still Irish whiskey brand, derives its distinctive "spicy oiliness" — a term whiskey writers have used consistently for decades — from the high proportion of unmalted barley in its mash and its careful pot still distillation.

Redbreast 12-year, which has been described by some critics as the finest Irish whiskey regularly available, uses triple distillation in Midleton's pot stills, an Irish five-to-six year maturation in ex-bourbon and ex-Oloroso sherry casks, and a mash bill of approximately 60 percent malted barley to 40 percent unmalted barley. The resulting whiskey has a character that is genuinely hard to categorise within the broader whiskey world — it shares the roundness of triple distillation with a grain complexity and spice that no Scotch single malt provides.

Jameson and the Blended Irish Style

Jameson Irish Whiskey — the world's best-selling Irish whiskey and one of the top-selling whiskies globally — is a blended Irish whiskey, not a pure pot still. It combines triple-distilled pure pot still whiskey (from grain mashes of malted and unmalted barley) with triple-distilled grain whiskey (from a high corn or wheat content mash, distilled in column stills to a high strength). The blend creates a spirit that is approachable, light, and consistent — ideal for the high-volume cocktail and casual drinking market it dominates.

The original Jameson formula was established by John Jameson at the Bow Street Distillery in Dublin, which operated from 1780 until 1971. The current production at New Midleton continues the blending philosophy while using modern large-scale equipment. Jameson's success — it has grown from a regional Irish brand to one of the dominant global spirits brands in the past three decades — is both a consequence and a driver of the global Irish whiskey revival, which has taken the category from near-irrelevance in the 1980s to a booming premium segment.

The New Distilleries and Their Approaches

The Irish whiskey revival has produced a wave of new distilleries opening since 2012, when Teeling Whiskey in Dublin became the first new Dublin distillery in 125 years. Subsequent openings include Roe & Co (also in Dublin, by Diageo), Tullamore (reopened), Waterford Distillery (focusing on barley terroir), Connacht Whiskey in the west, and many others. Not all of these new distilleries use triple distillation — several have opted for double distillation to produce a heavier, more traditional malt character, and some have experimented with copper pot stills of different shapes and sizes that produce new-make spirit with different profiles.

Waterford Distillery, founded by Mark Reynier (who previously led Bruichladdich's revival), has taken the most systematic approach to barley terroir in Irish distilling — sourcing barley from specific named farms across Ireland, malting it separately, and distilling and ageing each farm's barley as a separate lot. The resulting single farm origin expressions allow comparison across different Irish growing regions and are the most direct attempt to establish that Irish barley, like French wine grapes, expresses terroir in the finished spirit.
