The English-style rum tradition is the oldest in the Caribbean — Barbados is the documented origin of rum itself in the 1640s. Unlike rhum agricole (fresh cane juice) and Spanish-style (light, column-distilled, often filtered), English-style rum is made from molasses, typically uses pot stills (sometimes alongside column stills), and produces heavy, complex, ester-rich spirit. Demerara is a specific Guyanese sub-style with its own protected name.
1. Diamond Distillery / Demerara Distillers (Guyana)
Diamond Distillery in Diamond, Guyana, is the only producing rum distillery in Guyana and the steward of the legendary heritage stills: the wooden Coffey still (the only operating wooden continuous still in the world), the Enmore wooden pot still, the Port Mourant double wooden pot still (1732). Each still produces a "marque" with a distinct character.
