Top 10 Mezcal Palenques in Oaxaca and Beyond
Mezcal is an agave spirit produced under DO protection in nine Mexican states — Oaxaca, Durango, Guerrero, San Luis Potosí, Zacatecas, Tamaulipas, Guanajuato, Michoacán, and Puebla — using more than thirty different agave species (versus tequila's single agave). The traditional production at small village palenques involves earth-pit roasting of the agave hearts over wood, stone-tahona crushing, open fermentation with wild yeasts, and small clay or copper pot still distillation. The result: an intensely smoky, complex, terroir-driven spirit.
1. Del Maguey
Del Maguey, founded by Ron Cooper, pioneered the single-village mezcal category. Each expression — Chichicapa, San Luis del Río, Minero, Pechuga — is bottled from a specific village producer. Minero (clay still) and Pechuga (distilled with raw chicken, fruit, and spices) are flagships.
2. Mezcal Vago
Vago, by the Cortes family in Candelaria Yegolé, is among the most respected single-producer mezcal brands. Espadín, Mexicano, Tobalá, and the Elote (corn-finished) are among the most sought-after expressions.
