Top 10 Baijiu Distilleries in China
Baijiu (literally "white liquor") is the dominant spirit of China and the world's best-selling distilled spirit by volume — more than vodka, whiskey, and rum combined. Made from sorghum (sometimes plus rice, wheat, or barley) fermented with qu (a starter culture of moulds, yeasts, and bacteria on grain), then distilled, baijiu comes in four main aroma families: light aroma, strong aroma, sauce aroma, and rice aroma. Western drinkers are largely unfamiliar with the category.
1. Kweichow Moutai (Maotai-zhen, Guizhou)
Kweichow Moutai in Maotai-zhen, Guizhou, is China's most famous baijiu producer and the world's most valuable distillery company by market capitalisation. Sauce-aroma baijiu, made from local red sorghum and water from the Chishui River. The Flying Fairy label is the global flagship; older releases command extraordinary prices.
2. Wuliangye (Yibin, Sichuan)
Wuliangye in Yibin, Sichuan, is the second-most valuable baijiu producer and the largest by volume. Strong-aroma baijiu from a five-grain mashbill (sorghum, rice, glutinous rice, wheat, corn). The Wuliangye Classic is the flagship.
3. Yanghe (Suqian, Jiangsu)
Yanghe in Suqian, Jiangsu, produces strong-aroma baijiu in the soft mellow style of Jiangsu province. Yanghe Daqu and Mengzhi Lan are core. The third-largest baijiu company.
4. Luzhou Laojiao (Luzhou, Sichuan)
Luzhou Laojiao in Luzhou, Sichuan, is considered the original strong-aroma baijiu distillery — its 1573 fermentation pits are still in active use (the name "1573" appears on the premium label). The Guojiao 1573 is the flagship.
5. Fenjiu (Fenyang, Shanxi)
Fenjiu in Fenyang, Shanxi, is the classic light-aroma baijiu producer. The Qinghua (Blue and White) Fenjiu and the Bamboo Leaf Green (a herbal baijiu liqueur) are core. Light-aroma baijiu is the most approachable style for Western palates.
6. Gujing Gongjiu (Bozhou, Anhui)
Gujing Gongjiu in Bozhou, Anhui, is a strong-aroma baijiu producer with a long history — production traces to the Ming Dynasty. The Gujing Tribute Brew is the flagship.
7. Xifeng (Fengxiang, Shaanxi)
Xifeng in Fengxiang, Shaanxi, is the originator of a distinct aroma family — "feng-aroma" or "phoenix-aroma" — that doesn't fit cleanly into the four main categories. Xifeng Daqu and the premium expressions are core.
8. Dongjiu (Zunyi, Guizhou)
Dongjiu in Zunyi, Guizhou (south-west China), is a herbal-aroma baijiu — distilled with over 100 medicinal herbs in addition to the grain mash. A distinctive style that fits no other category.
9. Jiannanchun (Mianzhu, Sichuan)
Jiannanchun in Mianzhu, Sichuan, is one of the major Sichuan strong-aroma producers. The Jiannanchun Daqu and Premium Jiannanchun are core. Has historical importance — production traces to the Tang Dynasty.
10. Shuijingfang (Chengdu, Sichuan)
Shuijingfang in Chengdu is a small premium baijiu producer. The Shuijingfang historic distillery site (active since 1408) was excavated archaeologically and is now a museum. Shuijingfang Stately and Wellbay are flagship.
